Michel Truchon discovered the joys of cooking alongside his mother, Louise, in the family inn. After spending several years and having several experiences in other kitchens, the child who grew up in the region took over the family bistrot and turned it into a fine dining restaurant.
In the kitchen he lets his heart and instinct convey what he wants to show. He sees cuisine as a continual renewal, a game balancing textures and flavours, a harmony between terroir and a modern edge, limitless creation that never tells the same story.
This artisan of taste draws his inspiration at the source, the product, as a tribute to Aveyron, which infuses his unique recipes. Vegetables from the market, Aubrac beef, lamb sweetbreads, regional farmhouse cheeses, freshly-picked fruit… The perfectionist works with the best products as the seasons pass by and as inspiration comes to him.
